Healthy Twist on a Classic: Chicken Spaghetti with Burrata (Now with Zoodles!)

Are you looking for a way to enjoy your favorite pasta dishes without the carbs? We recently tried a fantastic recipe from Julia’s Album and gave it a low-carb twist by swapping out the pasta for zucchini noodles, aka zoodles. The result? A deliciously light yet satisfying meal that’s perfect for summer. Here’s how you can make it!


•4 medium zucchinis, spiralized into zoodles

•1 lb chicken breast, cut into bite-sized pieces

•2 tablespoons olive oil

•3 garlic cloves, minced

•1 teaspoon smoked paprika

•1 teaspoon dried basil

•Salt and pepper to taste

•1 cup cherry tomatoes, halved

•1 cup marinara sauce

•8 oz burrata cheese

•Fresh basil leaves for garnish


  1. Prepare the Chicken:

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces, season with smoked paprika, dried basil, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

2. Cook the Zoodles:

In the same skillet, add the remaining tablespoon of olive oil and garlic. Sauté for about 1 minute until fragrant.

Add the spiralized zucchini noodles to the skillet. Cook for 2-3 minutes until the zoodles are slightly tender but still have a crunch. Be careful not to overcook, as they can become mushy.

3. Combine and Serve:

Lower the heat to medium, add the cherry tomatoes and marinara sauce to the skillet. Stir to combine.

Return the cooked chicken to the skillet and mix everything together. Allow it to heat through for a couple of minutes.

Transfer the zoodle and chicken mixture to serving plates. Top each serving with a generous piece of burrata cheese.

Garnish with fresh basil leaves and a sprinkle of black pepper.
