Low-Carb, High Flavor - Family Kitchen Edition

At Roots Catering, we spend our days making food that brings people together — but at home, our own family meals are where creativity really shines. This week’s favorite proves that low-carb doesn’t have to mean low flavor.


Our latest kitchen experiment: a low-carb cottage cheese wrap that’s anything but boring. We started with a cottage cheese base for creaminess and protein, then layered smoked turkey, melty Cooper cheese, pickled eggs, fresh dill, and crisp pickles. To finish it off, we tossed a little lettuce in balsamic dressing for brightness and crunch.


The result? A high-protein, flavor-packed wrap that feels indulgent but keeps things light. It’s creamy, tangy, salty, and satisfying — everything we love in a quick family meal.


We’re not serving this one on the catering menu (for now 😉), but it’s too good not to share. Here’s how we made it!


🥒Low-Carb Cottage Cheese Wrap Recipe


Serves: 2

Prep Time: 10 minutes


Ingredients

  • 1 cup cottage cheese (small curd works best)

  • 4 slices smoked turkey breast

  • 2 slices Cooper cheese (or your favorite melty cheese)

  • 1 pickled egg, sliced

  • 1 small dill pickle, sliced thin

  • A few sprigs of fresh dill

  • 1 cup lettuce or mixed greens

  • 1 tablespoon balsamic vinaigrette

  • Salt and pepper, to taste


Instructions


  1. Prep your base: Spread the cottage cheese evenly on a low-carb wrap or large piece of parchment paper (if doing a “no-wrap” roll).

  2. Layer the flavor: Add turkey, Cooper cheese, sliced pickled egg, pickles, and fresh dill.

  3. Dress it up: Toss lettuce in balsamic vinaigrette, then add it on top.

  4. Roll it tight: Wrap it up like a burrito or fold it over and slice in half.

  5. Enjoy immediately — or chill for 10–15 minutes for a firmer, deli-style wrap.
