At Roots Catering, we love creating food that brings people together — but sometimes, our favorite dishes aren’t made in the kitchen at work. They’re made at home, surrounded by family, laughter, and maybe a little chaos.


This Low-Carb Honey Lime Chicken Nacho Waffle Slider recipe is one of those meals. It’s not a Roots Catering menu item, but a Roots family favorite that’s perfect for weekends, game nights, or whenever you’re craving something crispy, sweet, and a little bit spicy.


We love this recipe because it’s fun, flavor-packed, and totally low-carb thanks to a few smart swaps — including Real Good Foods chicken and homemade jalapeño bacon chaffles.

These sliders have it all:


  • Crispy, flavorful chicken

  • Sweet and tangy low-carb honey lime drizzle

  • Cheesy jalapeĂąo bacon chaffles as the “buns”

  • Creamy avocado and warm nacho cheese to tie it all together

🥩 Ingredients


For the Chicken


  • 1 box Real Good Foods Chicken Breast Nuggets or Strips (fully cooked, low-carb)

  • 1 tbsp olive oil or avocado oil (optional, for extra crispiness)


For the Honey Lime Drizzle


  • 3 tbsp low-carb honey (Nature’s Hollow or Wholesome Yum work great)

  • Juice of 2 limes

  • 1 tsp sugar-free hot sauce (optional)

  • Pinch of sea salt


For the JalapeĂąo Bacon Chaffles


Makes about 12 mini chaffles (for 6 sliders):


  • 2 eggs

  • 1 cup shredded mozzarella cheese

  • ½ cup shredded cheddar cheese

  • 1 small jalapeĂąo, finely diced (remove seeds for mild heat)

  • 2 slices crispy bacon, crumbled

  • ½ tsp baking powder (optional, for fluffier chaffles)

  • Pinch of garlic powder and smoked paprika


For the Sliders

  • 1–2 ripe avocados, sliced

  • ½ cup thinly sliced red onion

  • ½ cup sliced pickles or cucumber

  • ½ cup warm low-carb nacho cheese sauce (see below)

  • Fresh cilantro, chopped


🔥 Directions


Cook the Chicken


Air fry or bake Real Good Foods chicken per package instructions until crispy.

(Optional: Brush lightly with oil for extra crunch.)


Make the JalapeĂąo Bacon Chaffles


  1. Preheat your mini waffle maker.

  2. Whisk together eggs, cheeses, jalapeĂąo, bacon, baking powder, and spices.

  3. Lightly grease the waffle maker and pour in about 2 tbsp of batter per chaffle.

  4. Cook 3–4 minutes until golden and crisp.

  5. Let them cool slightly on a rack for maximum crunch.


Make the Honey Lime Drizzle


Whisk together low-carb honey, lime juice, hot sauce, and salt. Taste and adjust as desired.


Assemble the Sliders


  1. Bottom chaffle → crispy chicken → avocado slice → red onion → pickle → drizzle of honey lime → nacho cheese → cilantro → top chaffle.

  2. Secure with a toothpick if needed.


Serve


Serve warm with extra honey lime drizzle on the side. Perfect for sharing (or not sharing at all).


🧀 Quick Low-Carb Nacho Cheese Sauce


Melt together:


  • ½ cup shredded cheddar

  • 2 tbsp heavy cream

  • 1 tbsp cream cheese


    Stir until smooth. Add a pinch of chili powder or jalapeĂąo juice for extra flavor.


💡 Tips & Family Notes

  • About 4–5g net carbs per slider (depending on chaffle ingredients)

  • Great with a lime crema or guacamole for dipping

  • Leftover chaffles re-crisp beautifully in the air fryer
