This recipe will guide you through creating a flavorful and creamy roasted red bell pepper, carrot, and white bean dip with feta cheese, perfect for serving with crackers, vegetables, or as a spread on sandwiches. Here’s how to make it:


Ingredients:

• 2 red bell peppers, deseeded and sliced in half

• 3 large carrots, cut into a few pieces

• 1 head of garlic

• Olive oil & salt (for roasting)

• 15 oz can white beans, drained and rinsed

• 7 oz feta cheese

• Juice from 1 1/2 large lemons (approximately 1/4 cup)

• 2 tbsp olive oil

• 1 1/2 tsp salt

• 2 tsp smoked paprika

• 3/4 tsp red pepper flakes


Instructions:


1. Preheat the Oven & Prepare Vegetables:

Preheat your oven to 400°F (200°C).

Place the red bell peppers and carrot pieces on a baking sheet. Cut the top off the head of garlic to expose the cloves, drizzle with olive oil, and wrap it in foil. Place it on the baking sheet as well.

Drizzle the bell peppers and carrots with olive oil and sprinkle with a little salt to taste. Toss to coat evenly.


2. Roast the Vegetables:

Roast the vegetables in the preheated oven for about 30-40 minutes or until the bell peppers are charred and the carrots are tender. The garlic may need to be removed earlier if it’s done faster to avoid burning.


3. Prepare the Dip Base:

Once the vegetables are roasted and slightly cooled, peel the skin off the bell peppers.

Squeeze the roasted garlic cloves out of their skins.
